Vegetarian and vegan meals are becoming firmly planted in the world’s fast-food industry.

Taco Bell is looking at an entire new vegetarian menu, Chipotle has added vegetarian and vegan food to its output while Burger King revealed it will roll out its vegan Impossible Whopper across the US over the next few months.

But what is McDonald’s actually doing?

Well, the burger ‘baron’ has actually started selling its own plant-based burger, the Big Vegan Burger TS – but only in Germany!

Nestle developed the plant-based product used for their burger which contains soy and wheat protein, has ingredients like beets, carrots, and bell peppers.

And yet Steve Easterbrook, McDonald’s boss, will only say he is giving full consideration to introduce the burger internationally.

Come on Steve, get your teeth into it ! Burger King has  seen an 18 per cent rise in visitors to its US branches because of it’s whopping decision to feed vegans…and British baker Greggs’ vegan sausage roll has helped their sales go over £1billion for the first time.

The consumerwatchfoundation.com  Editor Leigh G Banks says: “I’m not a vegan but I don’t like meat. It’s not a moral stance, I just don’t like the look of it, the texture or the taste. I think it has something to do with the liver-ish pipes I was forced to eat as a child in our working-class terrace in the back streets of Manchester.

“I think I was traumatised into not liking meat – like if you have been in a car crash, you would prefer not to partake in another one!”

But the moral aspect is what is important to vegans.

They are simply happier to know that no animal suffered in the preparation of their meals. And of course there are factors like environmentally-friendly farming practices.

So, here our writer Maura, the Lazy Vegan comes up with another interesting look at a fast-food alternative:

Loaded vegan nachos: (@lazy_vegan_recipes)

Vegan taco “meat”:

  • 100g  TVP (Textured Vegetable Protein)
  • 500ml vegetable stock (to boil the TVP)
  • 3 – 4 tablespoons of oil
  • 3 tablespoons of taco meat seasoning
  • Boil the TVP in the broth for 10 minutes.
  • Transfer the drained TVP to a frying pan coated with some oil.
  • Fry for 10 minutes until crisp.
  • Add the taco meat seasoning.
  • Taste and adjust any seasonings to your liking.
  • Refried Beans:
  • 1 tablespoon oil
  • 3 garlic cloves, minced
  • 1 can beans of choice
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • water
  • a pinch of salt
  • Coat the bottom of a skillet with oil and place it over medium heat.
  • When the oil is hot, add the garlic. Cook for about 1 minute.
  • Stir in the beans, cumin, oregano, salt, and some water.
  • Lower the heat and allow it to simmer for about 5 minutes.
  • Add water during cooking if the mixture gets too dry.
  • Mash the beans with a fork or potato masher. Add water if needed to reach the desired consistency.

Guacamole:

  • 1 ripe avocado
  • 3 tablespoons lime or lemon juice
  • Salt and pepper to taste
  • Place the avocados into a small bowl and mash them well with a fork.
  • Season with salt, pepper, lemon/lime juice.

Nacho “Cheese” Sauce:

  • 200g cubed cooked potato
  • 100g cubed cooked carrot
  • 2 tablespoons nutritional yeast
  • 3 tablespoons lime or lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika powder
  • 1/2 teaspoon curcuma powder
  • 4 tablespoons of plant milk or water

  • Boil the potatoes and carrots.
  • Transfer the drained potatoes and carrots to a food processor or blender.
  • Add the other ingredients and blend until very smooth.
  • Add more milk if needed.
  • Taste and adjust any seasonings to your liking.

Toppings:

  • chopped scallions
  • tomato, diced and seeded
  • chopped jalapeño to taste (optional)
  • vegan sour cream (optional)

Chips:

  • one big bag of plane corn tortilla chips

Assemble the Nachos:

  • Place the tortilla chips on a large plate or skillet. 
  • Top with vegan “meat”, refried beans, guacamole, scallions, tomato, jalapeño and top off with the nacho “cheese” sauce and cream.
  • Serve.

Vegánske taco “mäso“:

  • 100 g sójového granulátu
  • 500 ml zeleninového bujónu (na varenie granulátu)
  • 3 – 4 polievkové lyžice oleja
  • 3 polievkové lyžice taco korenia
  • granulát varíme 10 minút vo vývare.
  • scedený granulát dáme na panvicu s olejom.
  • opekáme 10 minút (do chrumkava).
  • Pridáme taco korenie.
  • Ochutnáme a dochutíme podľa vlastnej preferencie.

Fazuľa:

  • 1 polievková lyžica oleja
  • 3 strúčiky cesnaku
  • 1 konzerva fazule podľa vlastného výberu
  • 2 č. lyžičky mletej rasce
  • 1 č. lyžička sušeného oregana
  • voda
  • štipka soli
  • panvicu potrieme olejom.
  • Keď je olej horúci, pridáme cesnak. Podusíme cca 1 minútu.
  • Pridáme fazuľu, rascu, oregano, soľ a trochu vody.
  • Znížime teplotu a necháme zmes variť asi 5 minút.
  • Počas varenia pridávame vodu, ak je zmes príliš suchá.
  • Popučíme fazuľu vidličkou alebo pučidlom na zemiaky. Podľa potreby pridávame vodu, aby sme dosiahli požadovanú konzistenciu.

Guacamole:

  • 1 zrelé avokádo
  • 3 polievkové lyžice limetkovej alebo citrónovej šťavy
  • Soľ a korenie podľa chuti
  •  Vložíme avokádo do misky a dobre ho rozdrvíme vidličkou.
  • Dochutíme soľou, korením a citrónovou/limetkovou šťavou.

“Syrová“ nacho omáčka:

  • 200g varených zemiakov (na kocky)
  • 100g varenej mrkvy (na kocky)
  • 2 lyžice lahôdkového droždia
  • 3 polievkové lyžice limetkovej alebo citrónovej šťavy
  • 1 č. lyžička soli
  • 1/2 č. lyžičky granulovaného cesnaku
  • 1/2 č. lyžičky sladkej papriky
  • 1/2 č. lyžičky kurkumy
  • 4 polievkové lyžice rastlinného mlieka alebo vody
  • Zemiaky a mrkvu uvaríme.
  • scedené zemiaky a mrkvu dáme do mixéra.
  • Pridáme všetky prísady a mixujeme do hladka.
  • V prípade potreby pridáme viac rastlinného mlieka.
  • Ochutnáme a dochutíme podľa seba.

Ostatné:

  • nasekaná jarná cibuľka
  • paradajka na kocky bez semienok
  • nasekané jalapeño podľa chuti (voliteľné)
  • vegánska smotana (voliteľné)

Nacho čipy:

  • jeden veľký balík tortilla chipsov

Nachos:

  • Umiestnime tortilla chipsy na veľký tanier alebo plech.
  • Posypeme s vegánskym mäsom, fazuľou, guacamole, cibuľkou, paradajkou, jalapeño a polejeme nacho “syrom“ a smotanou.
  • Servírujeme.
